Bacon wrapped Scallops

Cooked scallops
This is so good, it’s got to be a sin. These are one of my absolute favourite things to eat. We used to have them often in the States with our mates Lynn and Steve, but alas we only have them once a year in Germany now. Sigh, I think we should pop over to the States again…

They are pricey over here, so we eat them as a treat at Christmas time. The good thing about them is that they couldn’t be easier to prepare and definitely have the wow factor to go with it.
Uncooked scallops
Serves 4 as a starter or light lunch
INGREDIENTS
3-4 scallops per person
3-4 slices of bacon
2 tbsp oil, preferably olive oil
Serve with a tossed green salad
OPTIONAL: Serve with fried potato cubes for a more substantial meal

METHOD
1. Lightly stretch the bacon by putting it on a flat surface and use the back of a knife to flatten gently and pull the bacon gently at the same time. It’s not a necessary step, but you’d be surprised how much length you get out of a piece of bacon!
2. Wrap the bacon around the scallop, pressing the edges to seal. You can use a toothpick to keep it in place if you like.
3. Heat the oil in a frying pan and put the scallops in the pan, turning every minute or so to brown all sides. DO NOT overcook them please. They don’t need very long, about 5 minutes in total max. Rather put them back in again if they are underdone for your taste.
