Pork Colombo

Pork Colombo
We had this super meal with the wonderful Jo and Michel - I doubt they used their computer to defrost the meat (see http://www.acookonthefunnyside.com/content/computers-defrosters-and-pork... ), but it was fantastic anyway. The starter was a modern fantastic version of a Prawn Cocktail that blows the 70's version out of the water and will definitely be posted later, so stay loyal folks. Well done and thank you both for the great company and a wondefrul meal!

Pork Colombo Recipe
Serves 6

2 tbsp vegetable oil
1,2kg pork, cubed
500g lardons / bacon bits
400g onions, chopped
3 cloves of garlic, chopped
2 apples, peeled and quartered
400g tin peeled tomatoes
3 tbsp curry powder (as mild or hot as you like)
1 tbsp ground ginger
1 tbsp ground cinnamon
1 stock cube, vegetable or chicken, dissolved in 250ml water
6 small or 2 large smoked sausages, chopped
Salt and pepper to taste

METHOD:

1. Heat the oil and brown the pork cubes and lardons, remove. Add the onions and brown them then return the meat to the pan.
2. Add the garlic and apples, cook 2 minutes, then add the tomatoes.
3. Add the curry powder, ginger and cinnamon, simmer 2 minutes, then add the stock to the meat. Add the sausages and cook covered for 1 ½ hours.
4. It tastes even better if it's prepared the day before and reheated.
