The name of this dish means: The Iman fainted. Why did the Iman faint, one asks? Well, there are 2 theories for this. The first one says that he fainted because the meal was so spectacular that he fainted at the sheer pleasure of it. I quite agree with him.

The second says he fainted when he heard how much olive oil there was in it and a) was worried about his heart with all the oil or b) was worried about the cost of all that oil in dish. To avoid this problem, I have basically removed just about all the oil. And reduced the cooking time by using the pressure cooker, and and and...

Can the dish still be the original when you change it so much? No idea, but my version is damn good if you ask me. I looked up Iman Bayildi online and there are many many versions of the dish, so mine is just another. IMAN BAYILDI RECIPE

1 big aubergine, cubed
2 big onions, chopped
1 red pepper, chopped
4-10 cloves garlic, chopped
1 tin tomatoes
1 tbsp oil
salt and pepper

METHOD:

1. This could not be easier. Saute the onion briefly in the oil, add it and the rest of the ingredients to the pressure cooker and cook under pressure for 5 minutes. NOTE: Please follow the manufacturers instructions for your pressure cooker.
2. Leave to de-pressure and then eat! It is quite soupy which I loved and i mopped up the juices with bread, but my husband prefers it drier, so I strained the dish before serving it to him.

Serving suggestions: serve with white bread as in the photo; or with potatoes or couscous; puree the vegetables and use as a vegetarian spread; add leeks and serve as a soup (deelicious).
