Black and White Biscuits
It's Christmas again (or almost) and I just know you want some more Christmas biscuit recipes, don't ya. I think these look so stunning and they even taste good. Well, you know, sometimes good things get sacrificed for beauty...but not today! So without further ado, here's the recipe.

Black and White Biscuits
Makes about 60 biscuits

300g soft butter
150g icing sugar
1 x 10g packet of vanilla sugar OR 1 tsp vanilla essence
400g flour
2 tbsp cocoa powder
1-2 tbsp cream
Flour for the work surface
Baking paper for the baking trays

METHOD:

1. Beat butter, sugar and vanilla until creamy. Add the flour and knead briefly to make a smooth dough. Divide dough in two and add the cocoa to one half. Cover with plastic wrap and put in the fridge for at least an hour.
2. Take the dough out of the fridge and divide each into 2 or 3 portions. Roll out one white and one black piece of pastry on a floured surface. Spread a little bit of cream over the bottom pastry and place the second piece on top. The cream helps the 2 pieces to stick together and bake more evenly. Roll up as tightly as possible as this helps that they don't come apart while baking. Put white on top of some and black on top of others as it gives a lovely color effect when you serve them.
3. TIP: Now put the rolls back in the fridge. This dough is much easier to work with when it's cold. If it starts sticking to you or the work surface at any point, put it back in the fridge, have a cuppa and carry on later.
4. Preheat the oven to 180°C. Slice the rolls into about 1cm slices, place on the baking paper on the trays and bake for about 12 minutes. Remove and cool and then transfer to an airtight container. They keep for a long time – if you can resist eating them that is!
5. Any leftovers can be rolled out and cut into shapes and baked in the same way. Cut down the baking time to 10 minutes if you roll them out thinly.
