Chickpeas with Bacalhao / Salt Cod

Chickpeas with bacalhao with a cabbage salad
Serves 4 as a light starter or serve as part of a Tapas selection.

-Salt cod / Bacalhao: This dried fish is a staple in Portugal and many other countries and is a super addition to any kitchen. You can prepare it two ways: 1) just wash it under running water and then shred. I find that this can be very salty and prefer the second method. 2) soak the fish in cold water for 24 hours, changing the water several times.

1 jar (800g) chickpeas, washed and drained
1 tbsp oil
1 onion, chopped
2 cloves garlic, crushed
50-100g bacalhao / salt cod, soaked (as above) and drained

METHOD

1. Saute the onion and garlic in oil. Add the fish and cook till done, about 5-10 minutes. Add the chickpeas to heat through.
2. Enjoy!!
