Lena's Potato Salad
I don’t know about you, but I love potato salad. My mother made a deevine yet incredibly simple one with just potatoes, hard-boiled eggs and mayonnaise which we always had with braais (barbecue to the rest of the world!).

My mother-in-law also makes a deevine Schwabian potato salad (an area of Germany) – see this post for the recipe http://www.acookonthefunnyside.com/German-potato-salad . Lena made us a Polish/German Potato Salad today and it too was deevine. It uses a lot more veggies, something we love, and is a meal in itself. Although I was very happy to have the sausages with it too!
Lena's Potato Salad
THE RECIPE

1kg potatoes, peeled and cooked (or cooked then peeled), finely diced
4 gherkins, finely diced
4 hard boiled eggs, finely diced
1 tin peas and carrots, carrots finely diced
1 apple, peeled and finely diced
1 onion, finely diced
1/3 cup / 60ml mayonnaise, less or more to taste
Salt and pepper
To decorate:
Extra mayonnaise
Slices of egg and gherkins
To serve:
Frankfurters and mustard, optional

METHOD:
(Note: the quantities are a guideline, so feel free to change the quantities as it suits you.)
1. Mix all the diced vegetables together, add the mayonnaise and season aggressively with salt and pepper. It does this salad does well to sit for several hours in the fridge while the flavours mingle. Just remember to take it out of the fridge at least 20 minutes before serving.
2. To decorate, you could spread the salad with a fine layer of mayonnaise then decoratively spread the egg and gherkin slices around.
3. This salad is traditionally served with frankfurters and mustard, but it is equally good on its own.
