Thai Fried Shrimp with Garlic and Pepper

Thai shrimp with garlic and pepper
A linguistics professor was lecturing to his English class one day. "In English," he said, "A double negative forms a positive. In some languages, though, such as Russian, a double negative is still a negative. However, there is no language wherein a double positive can form a negative."
A voice from the back of the room piped up, "Yeah, right."

This has nothing to do with today's recipe, but it is in keeping with starting this whole Thai series with a joke, of sorts. But alas, this is the last Thai recipe, so you'll just have to come back to see what I start the next series with.
Thai shrimp with garlic and pepper
FRIED SHRIMP WITH GARLIC AND PEPPER
(Kuong gratiem prik thai)

200g shrimps, raw
½ tsp white pepper
¼ tsp salt
½ tsp sugar
3 tbsp garlic, crushed
1 tbsp soy sauce
1 ½ tbsp cooking oil
GARNISH:
Cucumber
Tomato
Cilantro / coriander, fresh, chopped

METHOD:

1. Marinate the shrimps in the pepper, salt, sugar, garlic and soy sauce for about 20-30minutes.
2. Heat the oil and then stir-fry the shrimps over a low heat, being careful not to overcook them. This should only take a couple of minutes.
3. Serve with the sliced cucumber and tomato and sprinkle with cilantro/coriander.
4. Enjoy!
