Take a wild guess what the colours of the Portuguese flag are? Come on, you can do it. YES! Red and green they are. This Fish Seller in Olhão is clearly not only a good salesman but also a dedicated patriot. He’s got my vote for sure.

We have tried many of his fish and they are always fresh and superb. Not knowing what the fish are only adds to the fun. I just ask how they would prepare it - “You cook it” – thank you! No seriously, they all give advice and ideas and then we grill it. Awesome is all I have to say.

We have prepared the different fish in several different ways:
-Grilling / barbequing is a definite favourite. We use proper wood and let it burn down to coals, but you can use charcoal if you prefer. Grill slowly, turning often – used a hinged grill so that you don’t have to handle the fish and risk it falling apart.
-Bake it in the oven (yes I have an oven in the campervan!). Put the whole seasoned fish on top of your chopped potatoes veggies, sprinkle with oil and bake for half an hour.
-In the frying pan: flour and season the whole fish, then fry in oil for about 10 minutes per side. I turn only once to avoid it falling apart, but you do have to be careful.
