Peri-Peri Chicken Recipe

Chicken peri peri
I adore spicy food and when I worked as a rep in the restaurant industry a hundred years ago, I used to have ½ a extra hot peri peri chicken for breakfast on Thursdays when I visited Nandos in Sea Point. It's the perfect way to start the day if you ask me.

Sandra, the lovely Portuguese restaurant owner you met in the post ( … ) said that there is no such thing as traditional peri-peri chicken as it was invented for the tourists. No! I don't want to believe this so I won't! The dish may not be traditional (grumble), but the peri-peri chilli sauce is definitely of Portuguese origin.

Peri-peri or piri-piri is also called African Birds Eye Chilli and is lovely and hot. The sauce however is to die for, it's that good. And I mean every and all I have ever tasted. They vary enormously in strength and flavour, but each and every one is deelicious.

This is what wiki has to say about how it is made:
Piri piri sauce (used as a seasoning or marinade) is Portuguese in origin and "especially prevalent in Angola, Namibia, Mozambique and South Africa". It is made from crushed chillies, citrus peel, onion, garlic, pepper, salt, lemon juice, bay leaves, paprika, pimiento, basil, oregano, and tarragon.

Recipes vary from region to region but the common ingredients will be the chilli, lemon, oil, red bell peppers and garlic. Today it can be easily made in a blender or by shaking the ingredients up in a jar.

There are many different recipes for making peri-peri sauce and above there are a couple of links for you to try. I, however, have come up with a very simple and deelicious store cupboard one for you to try and here it is!

PS: The photo at the top of this blog is of barbecued peri-peri chicken we had in a restaurant and not of my recipe which we ate too quickly and forgot to photograph!

CRYSTAL'S PERI PERI CHICKEN

1 heaped tsp peri peri powder
1 tbsp paprika paste, optional but definitely improves the flavour
1 tsp garlic powder
Juice of ½ lemon
1 tbsp olive oil
1 chicken, cut into pieces
2 tbsp sunflower oil

METHOD:
1. Mix all the ingredients together and rub all over the chicken, making sure you get under the skin too. Marinade for at least 3 hours or overnight.
2. Saute in the oil till done, about 35 minutes. Also tastes deelicious on the barbecue.
3. And all that's left is to enjoy it! Oh yes, serve with chips and a salad and you have a great dinner.
